A family friendly spice blend for making Kofta and Falafel.

  • 250g each lamb& beef mince (or just lamb)
  • 1/4 cup pine nuts
  • 2 cloves garlic
  • 1/4 red capsicum
  • 1/2 onion
  • 1 tbsp Herbie’s Kofta spice mix
  • 2 tbsp each coriander & mint leaves
  • Hummus, lemon, flatbreads, to serve


  1. Pre-soak 8 bamboo skewers or use metal skewers
  2. Toast pine nuts in dry pan, remove and set aside
  3. Blitz onion, garlic and capsicum to a rough paste
  4. Add Kofta spice mix, pine nuts and meat, and process until fairly smooth
  5. Divide mixture into 8 and make each eighth into a sausage
  6. Refrigerate until firm, skewer each Kofta
  7. Cook on barbecue or griddle approx 10 minutes.



  • 1 1/2 cups dried uncooked chickpeas
  • 1 onion
  • 2 cloves garlic
  • 3 teaspoons salt
  • 1 tbsp Herbie’s Kofta spice blend
  • 3 – 4 tbsp lemon juice
  • 1 packed cup each fresh parsley and coriander


  1. Soak chickpeas overnight, drain.
  2. Blitz all ingredients, then make into patties 5cm diameter, 3-4cm thick.
  3. Heat vegetable oil to 2cm deep in frying pan
  4. When small bubbles appear, cook falafel 3-4 mins each side until golden
  5. Drain on paper towel.
    Makes approx 18 falafel.
